It Started with a Question

That was our founder's dilemma, night after night. Working late shifts, studying for exams, or simply being a night owl shouldn't mean compromising on food quality or values.

So we asked: Why can't late-night food be different? Why can't it be better?

The 3 AM Epiphany

Our founder, craving healthy Indian food at 3 AM, realizes Rochester has no quality late-night options.

2024January

Research & Learning

Started researching, learning culinary techniques, and practicing recipes for the perfect late-night menu.

2025June

Paperwork Signed

Signed paperwork to open at 250 East Main Street, began planning our plastic-free kitchen.

2025August

Team Assembly

Recruiting passionate chefs and night owls who believe in our vision of clean, late-night dining.

Grand Opening

Opening our doors at 9 PM to serve Rochester's night shift workers, students, and fellow insomniacs.

Our plastic-free kitchen, with its gleaming stainless steel and seasoned cast iron, will produce flavors that rival any traditional kitchen. Our packaging from Notpla and Sofi will show that sustainability doesn't mean compromise.

But most importantly, we're building a community of Night Owls who believe there's a hunger for something better. For food that will fuel your late nights without the guilt. For a restaurant that shares your values.
